  4. 4. Pat the thyme dry with a kitchen towel.
  5. 5. Strip the thyme leaves from the stems.
  6. 6. Roll out the puff pastry flat with a rolling pin.
  7. 7. Ensure the pastry measures approximately 40 by 20 centimeters.
  8. 8. Sprinkle the cheese evenly over the pastry.
  9. 9. Distribute the chopped olives on the pastry.
  10. 10. Sprinkle the thyme leaves over the top.
  11. 11. Roll the left short side of the pastry tightly towards the center.
  12. 12. Roll the right short side of the pastry tightly towards the center.
  13. 13. Whisk the egg with the cream in a small bowl.
  14. 14. Open the roll briefly at the joining point.
  15. 15. Brush the inner surfaces of the roll with the egg mixture.
  16. 16. Press the roll firmly together.
  17. 17. Wrap the roll in cling film.
  18. 18. Place the roll in the refrigerator for about 30 minutes.
  19. 19. Preheat the oven to 200 degrees Celsius with top and bottom heat.
