🍽️ Savory Puff Pastry Snails

Ingredients
- 100 g black olives (pitted)
- 5 sprigs thyme
- 300 g puff pastry
- 60 g grated Parmesan
- 1 egg
- 2 tbsp whipping cream
Instructions
- 1. Drain the olives well in a sieve.
- 2. Chop the olives roughly.
- 3. Rinse the thyme under cold water.
- 4. Pat the thyme dry with a kitchen towel.
- 5. Strip the thyme leaves from the stems.
- 6. Roll out the puff pastry flat with a rolling pin.
- 7. Ensure the pastry measures approximately 40 by 20 centimeters.
- 8. Sprinkle the cheese evenly over the pastry.
- 9. Distribute the chopped olives on the pastry.
- 10. Sprinkle the thyme leaves over the top.
- 11. Roll the left short side of the pastry tightly towards the center.
- 12. Roll the right short side of the pastry tightly towards the center.
- 13. Whisk the egg with the cream in a small bowl.
- 14. Open the roll briefly at the joining point.
- 15. Brush the inner surfaces of the roll with the egg mixture.
- 16. Press the roll firmly together.
- 17. Wrap the roll in cling film.
- 18. Place the roll in the refrigerator for about 30 minutes.
- 19. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 20. Remove the roll from the cling film.
- 21. Slice the roll into approximately 1 centimeter thick pieces using a sharp knife.
- 22. Flatten each piece slightly.
- 23. Set the height of the slices to about 0.5 centimeters.
- 24. Place the slices on a baking tray lined with baking paper.
- 25. Brush the slices with the remaining egg mixture.
- 26. Bake the snails in the oven for about 20 minutes.
- 27. Remove the pastry from the oven.
- 28. Let the pastry cool on a wire rack.
