🍽️ Spicy Apple and Celery Puree

Ingredients
- 330 g celeriac (1 piece)
- 200 g tart apples (1 tart apple)
- salt
- 4 tbsp soy cream
- 1 tbsp butter
- pepper
Instructions
- 1. Peel the celery stalks.
- 2. Cut the celery into approx. 2 cm cubes.
- 3. Quarter the apple.
- 4. Peel the apple quarters.
- 5. Remove the core of the apple.
- 6. Cut the apple into cubes as well.
- 7. Place the apple and celery cubes into a pot.
- 8. Season the ingredients with a little salt.
- 9. Pour in enough water so that the ingredients are covered only halfway.
- 10. Cover the pot with a lid.
- 11. Bring the water to a boil once.
- 12. Reduce the heat to low.
- 13. Let the ingredients simmer for about 20 minutes.
- 14. Drain the cooking water.
- 15. Place the pot back on the hot stove burner.
- 16. Let the remaining moisture evaporate briefly.
- 17. Puree the mixture finely using a hand blender or in a mixer.
- 18. Take the soy cream and the butter.
- 19. Whisk both into the puree using a whisk.
- 20. Season the puree with salt and pepper.
- 21. Serve the puree immediately.
