  1. 1. Peel the celery stalks.
  2. 2. Cut the celery into approx. 2 cm cubes.
  3. 3. Quarter the apple.
  4. 4. Peel the apple quarters.
  5. 5. Remove the core of the apple.
  6. 6. Cut the apple into cubes as well.
  7. 7. Place the apple and celery cubes into a pot.
  8. 8. Season the ingredients with a little salt.
  9. 9. Pour in enough water so that the ingredients are covered only halfway.
  10. 10. Cover the pot with a lid.
  11. 11. Bring the water to a boil once.
  12. 12. Reduce the heat to low.
  13. 13. Let the ingredients simmer for about 20 minutes.
  14. 14. Drain the cooking water.
  15. 15. Place the pot back on the hot stove burner.
  16. 16. Let the remaining moisture evaporate briefly.
  17. 17. Puree the mixture finely using a hand blender or in a mixer.
  18. 18. Take the soy cream and the butter.
  19. 19. Whisk both into the puree using a whisk.
  20. 20. Season the puree with salt and pepper.
  21. 21. Serve the puree immediately.
