🍳 Savory Sesam Bread Plait

Ingredients
- 0.5 bunch thyme
- 0.5 bunch rosemary
- 50 g black olives (pitted)
- 750 g flour
- 1 tsp salt
- 1 tsp pepper
- 420 ml milk (1.5% fat)
- 1 tsp sugar
- 30 g fresh yeast
- 50 ml olive oil
- 1 egg yolk
- 2 tbsp sesame seeds
Instructions
- 1. Wash the thyme and rosemary under running water.
- 2. Shake the herbs dry.
- 3. Pluck the leaves from the thyme and the needles from the rosemary.
- 4. Roughly chop the rosemary and the olives.
- 5. Put flour, salt, and pepper into a large mixing bowl.
- 6. Stir the dry ingredients with a wooden spoon.
- 7. Warm the milk slightly in a small saucepan.
- 8. Take five tablespoons of the warm milk and put them into a small bowl.
- 9. Set the small bowl with milk aside.
- 10. Stir the sugar into the remaining milk.
- 11. Crumble the yeast into the sugared milk.
- 12. Pour the yeast milk onto the dry ingredients in the large bowl.
- 13. Add the olive oil.
- 14. Knead everything with the dough hooks of a hand mixer.
- 15. Knead until a smooth and pliable dough forms.
- 16. Knead in the chopped herbs and olives.
- 17. Cover the bowl with a kitchen towel.
- 18. Place the dough in a warm spot.
- 19. Let the dough rise for about 45 minutes.
- 20. Wait until the dough volume has doubled.
- 21. Sprinkle some flour on the work surface.
- 22. Place the dough on the floured surface.
- 23. Knead the dough briefly with your hands.
- 24. Lightly flour your hands if the dough sticks.
- 25. Divide the dough into three equal pieces.
- 26. Shape each piece into a roll.
- 27. The rolls should be about 30 centimeters long.
- 28. Place the three rolls side by side.
- 29. Braid the three rolls together into a plait.
- 30. Press the ends of the plait together slightly.
- 31. Line a baking tray with baking paper.
- 32. Place the plait on the tray.
- 33. Cover the plait.
- 34. Let the plait rise for another 30 minutes.
- 35. Separate an egg while you wait.
- 36. Add the egg yolk to the milk set aside earlier.
- 37. Whisk the egg yolk and milk well.
- 38. Use the egg white for another purpose.
- 39. Brush the plait with half of the egg milk.
- 40. Preheat the oven to 200 degrees.
- 41. Use fan oven 180 degrees or gas mark 3.
- 42. Place the tray on the second rack from the bottom.
- 43. Bake the plait for 60 minutes.
- 44. Brush the plait with the remaining egg milk after 45 minutes.
- 45. Sprinkle sesame seeds over the plait.
- 46. Let the plait cool on a cake rack.
