  1. 1. Remove the tough outer leaves from the lemongrass.
  2. 2. Slice the tender inner part of the lemongrass into thin rings.
  3. 3. Pour boiling water over the peaches to blanch them (cook briefly in boiling water).
  4. 4. Immediately plunge the peaches into cold water to stop the cooking process.
  5. 5. Peel the skin off the peaches.
  6. 6. Cut the peaches in half and remove the pit.
  7. 7. Cut the peach halves into thin wedges.
  8. 8. Add the juice, sugar, lemongrass, star anise, and cinnamon stick to a pot.
  9. 9. Heat the mixture until it is warm.
  10. 10. Place the peach wedges into the warm liquid.
  11. 11. Remove the pot from the heat.
  12. 12. Let the peaches cool down in the liquid.
  13. 13. Wash the spring onions thoroughly.
  14. 14. Trim the dry ends of the spring onions.
  15. 15. Slice the spring onions diagonally into thin rings.
  16. 16. Bring a pot of water and salt to a boil.
  17. 17. Cook the pasta in it until it is firm to the bite (al dente).
  18. 18. Drain the pasta.
  19. 19. Rinse the pasta with cold water to cool them down.
  20. 20. Let the pasta drain well.
  21. 21. Rinse the chicken meat under running water.
  22. 22. Pat the meat dry with a kitchen towel.
  23. 23. Cut the meat into thin strips.
  24. 24. Heat oil in a large pan.
  25. 25. Fry the meat strips until golden brown on all sides.

  32. 32. Add some of the peach liquid to the pasta.
  33. 33. Add the fried meat to the bowl.
  34. 34. Add the remaining spring onions to the bowl.
  35. 35. Mix all ingredients in the bowl thoroughly.
  36. 36. Arrange the salad in a serving dish.
  37. 37. Place the remaining peaches separately on the plate or in a small bowl.
  38. 38. Serve the salad immediately.
