🍝 Spicy Pasta Salad with Chicken, Peach, Lemongrass, and Star Anise

Ingredients
- 1 stalk lemongrass
- 500 g peaches
- 200 g apple juice
- 1 untreated lime (juice)
- 1 tsp palm sugar
- 5 star anise
- 1 cinnamon stick
- 3 spring onions
- 400 g mie noodles (Asian salad noodles)
- salt
- 350 g chicken breast fillet (kitchen-ready, skinless)
- 2 tbsp germ oil
- pepper (from the mill)
Instructions
- 1. Remove the tough outer leaves from the lemongrass.
- 2. Slice the tender inner part of the lemongrass into thin rings.
- 3. Pour boiling water over the peaches to blanch them (cook briefly in boiling water).
- 4. Immediately plunge the peaches into cold water to stop the cooking process.
- 5. Peel the skin off the peaches.
- 6. Cut the peaches in half and remove the pit.
- 7. Cut the peach halves into thin wedges.
- 8. Add the juice, sugar, lemongrass, star anise, and cinnamon stick to a pot.
- 9. Heat the mixture until it is warm.
- 10. Place the peach wedges into the warm liquid.
- 11. Remove the pot from the heat.
- 12. Let the peaches cool down in the liquid.
- 13. Wash the spring onions thoroughly.
- 14. Trim the dry ends of the spring onions.
- 15. Slice the spring onions diagonally into thin rings.
- 16. Bring a pot of water and salt to a boil.
- 17. Cook the pasta in it until it is firm to the bite (al dente).
- 18. Drain the pasta.
- 19. Rinse the pasta with cold water to cool them down.
- 20. Let the pasta drain well.
- 21. Rinse the chicken meat under running water.
- 22. Pat the meat dry with a kitchen towel.
- 23. Cut the meat into thin strips.
- 24. Heat oil in a large pan.
- 25. Fry the meat strips until golden brown on all sides.
- 26. Season the meat with salt and pepper.
- 27. Add the spring onion rings to the pan and toss them briefly.
- 28. Remove the meat with the onions from the pan and set aside.
- 29. Place the drained pasta into a large bowl.
- 30. Take two-thirds of the marinated peaches out of the liquid.
- 31. Add the peaches to the pasta.
- 32. Add some of the peach liquid to the pasta.
- 33. Add the fried meat to the bowl.
- 34. Add the remaining spring onions to the bowl.
- 35. Mix all ingredients in the bowl thoroughly.
- 36. Arrange the salad in a serving dish.
- 37. Place the remaining peaches separately on the plate or in a small bowl.
- 38. Serve the salad immediately.
