🥗 Spicy Melon and Arugula Salad with Feta and Lemon Dressing

Ingredients
- 200 g arugula
- 1 red onion
- 600 g watermelon (peeled)
- 2 tbsp pine nuts
- 1 lemon
- 4 tbsp olive oil
- 1 pinch sugar
- salt
- pepper (from the mill)
- mint (for garnishing)
- 200 g feta
Instructions
- 1. Wash the arugula thoroughly and dry it well.
- 2. Tear large arugula leaves into bite-sized pieces.
- 3. Peel the onion and slice it into thin rings.
- 4. Cut the watermelon into small, edible cubes.
- 5. Toast the pine nuts in a dry pan until golden brown.
- 6. Let the toasted pine nuts cool down completely.
- 7. Squeeze the lemon to extract the juice.
- 8. Whisk the lemon juice with the olive oil and the sugar.
- 9. Season the mixture generously with salt and pepper.
- 10. Distribute the arugula, melon cubes, and onion rings onto the plates.
- 11. Sprinkle the cooled pine nuts over the salad.
- 12. Drizzle the salad with the prepared lemon vinaigrette.
- 13. Garnish the salad with fresh mint leaves.
- 14. Serve the feta separately so everyone can decide for themselves.
