🍽️ Spicy Mandarin Salad with Yogurt Dip

Ingredients
- 3 clementines
- juice of one clementine
- 2 shallots (or alternatively 1 onion)
- 200 g Brie
- 250 g yogurt
- 16 chicory leaves (1–2 heads)
- 2 tsp hot mustard
- 3 tbsp lemon juice
- pepper
- salt
- 0.5 bunch parsley
Instructions
- 1. Peel two mandarins and divide them into segments.
- 2. Halve the mandarin segments.
- 3. Squeeze one additional mandarin to get the juice.
- 4. Cut the brie into small cubes.
- 5. Finely chop the shallots.
- 6. Set aside some parsley sprigs for decoration.
- 7. Finely chop the remaining parsley.
- 8. Place the brie, mandarin pieces, shallots, and chopped parsley into a bowl.
- 9. Add some lemon juice, salt, and pepper.
- 10. Mix the ingredients in the bowl well.
- 11. Wash the chicory leaves.
- 12. Fill the chicory leaves with the mandarin-brie mixture.
- 13. Arrange about three to four filled leaves per plate.
- 14. Garnish the plates with the reserved parsley sprigs.
- 15. Mix the yogurt with the mustard and the mandarin juice.
- 16. Season the dressing with salt and pepper.
- 17. Serve the dressing alongside the filled chicory leaves.
