  2. 2. Halve the mandarin segments.
  3. 3. Squeeze one additional mandarin to get the juice.
  4. 4. Cut the brie into small cubes.
  5. 5. Finely chop the shallots.
  6. 6. Set aside some parsley sprigs for decoration.
  7. 7. Finely chop the remaining parsley.
  8. 8. Place the brie, mandarin pieces, shallots, and chopped parsley into a bowl.
  9. 9. Add some lemon juice, salt, and pepper.
  10. 10. Mix the ingredients in the bowl well.
  11. 11. Wash the chicory leaves.
  12. 12. Fill the chicory leaves with the mandarin-brie mixture.
  13. 13. Arrange about three to four filled leaves per plate.
  14. 14. Garnish the plates with the reserved parsley sprigs.
  15. 15. Mix the yogurt with the mustard and the mandarin juice.
  16. 16. Season the dressing with salt and pepper.
  17. 17. Serve the dressing alongside the filled chicory leaves.
