🍽️ Spicy Cheese Schmarrn with Crispy Bacon

Ingredients
- 4 Eggs
- 150 g Flour
- 500 ml Milk
- 2 tbsp chopped Parsley
- grated Nutmeg
- 3 small Carrots
- 1 thin stalk Leek
- 2 large Onions
- 4 slices Breakfast Bacon
- 2 tbsp Butter
- Salt
- Pepper (from the mill)
- Sugar
- 100 g Gruyère Cheese
Instructions
- 1. Wash the carrots and peel them. Slice them into thin rounds.
- 2. Clean the leek and wash it. Slice it into rings.
- 3. Peel the onions and halve them. Dice them finely.
- 4. Fry the bacon in a large non-stick pan over medium heat until crispy.
- 5. Remove the bacon from the pan and let it drain on kitchen paper.
- 6. Add the butter to the remaining fat in the pan.
- 7. Sauté the carrots and onions together for 10 minutes over low heat.
- 8. Add the leek to the other vegetables after 5 minutes of sautéing.
- 9. Season everything with salt, pepper, and a pinch of sugar.
- 10. Grate the cheese finely.
- 11. Separate the eggs. Set the egg yolks aside.
- 12. Whip the egg whites until stiff.
- 13. Mix the flour with the milk, egg yolks, and parsley.
- 14. Season the batter with salt, pepper, and nutmeg.
- 15. Let the batter rest and swell for 10 to 20 minutes.
- 16. Gently fold the whipped egg whites into the batter.
- 17. Remove half of the vegetables from the pan.
- 18. Pour half of the batter over the remaining vegetables in the pan.
- 19. Let the Schmarrn set over low heat with the lid closed for 4 to 5 minutes.
- 20. Flip the Schmarrn.
- 21. Let the other side set for another 4 minutes.
- 22. Tear the finished pancake into pieces using two spatulas.
- 23. Remove the Schmarrn from the pan.
- 24. Keep the Schmarrn warm in the oven at 80 degrees Celsius.
- 25. Repeat the process with the remaining vegetables and batter.
- 26. Take the finished Schmarrn out of the oven.
- 27. Return the Schmarrn to the pan.
- 28. Mix everything thoroughly with the grated cheese.
- 29. Melt the cheese under the hot grill if necessary.
- 30. Serve the Schmarrn garnished with the crispy bacon.
