  1. 1. Wash the carrots and peel them. Slice them into thin rounds.
  2. 2. Clean the leek and wash it. Slice it into rings.
  3. 3. Peel the onions and halve them. Dice them finely.
  4. 4. Fry the bacon in a large non-stick pan over medium heat until crispy.
  5. 5. Remove the bacon from the pan and let it drain on kitchen paper.
  6. 6. Add the butter to the remaining fat in the pan.
  7. 7. Sauté the carrots and onions together for 10 minutes over low heat.
  8. 8. Add the leek to the other vegetables after 5 minutes of sautéing.
  9. 9. Season everything with salt, pepper, and a pinch of sugar.
  10. 10. Grate the cheese finely.
  11. 11. Separate the eggs. Set the egg yolks aside.
  12. 12. Whip the egg whites until stiff.
  13. 13. Mix the flour with the milk, egg yolks, and parsley.
  14. 14. Season the batter with salt, pepper, and nutmeg.
  15. 15. Let the batter rest and swell for 10 to 20 minutes.
  16. 16. Gently fold the whipped egg whites into the batter.
  17. 17. Remove half of the vegetables from the pan.
  18. 18. Pour half of the batter over the remaining vegetables in the pan.
  19. 19. Let the Schmarrn set over low heat with the lid closed for 4 to 5 minutes.
  20. 20. Flip the Schmarrn.
  21. 21. Let the other side set for another 4 minutes.
  22. 22. Tear the finished pancake into pieces using two spatulas.
  23. 23. Remove the Schmarrn from the pan.
  24. 24. Keep the Schmarrn warm in the oven at 80 degrees Celsius.
  25. 25. Repeat the process with the remaining vegetables and batter.
  26. 26. Take the finished Schmarrn out of the oven.
  27. 27. Return the Schmarrn to the pan.
  28. 28. Mix everything thoroughly with the grated cheese.
  29. 29. Melt the cheese under the hot grill if necessary.
  30. 30. Serve the Schmarrn garnished with the crispy bacon.
