🍳 Spicy Breakfast Wrap

Ingredients
- 8 eggs
- 2 tbsp flour
- salt
- 4 tsp oil
- 1 carrot
- 1 bunch chives
- 2 cups Exquisa (grainy fresh cheese Fitline 0.8% fat)
- pepper (from the mill)
- 8 slices smoked turkey breast deli meat
Instructions
- 1. Whisk one egg with some flour in a bowl until smooth.
- 2. Add the remaining seven eggs and stir everything well.
- 3. Season the egg mixture with salt.
- 4. Heat one teaspoon of oil in a non-stick pan with a diameter of 20 centimeters.
- 5. Fry four thin omelets from the egg mixture.
- 6. Let the finished omelets cool on a flat plate.
- 7. Peel the carrot in the meantime and grate it coarsely.
- 8. Wash the chives and shake them dry.
- 9. Cut the chives into fine rings.
- 10. Mix cream cheese, the grated carrots, and the chives in a bowl.
- 11. Season the filling with salt and pepper.
- 12. Evenly cover the cooled omelets with turkey breast.
- 13. Spread the carrot cream cheese mixture over the topped omelets.
- 14. Fold the right and left edges of the wraps about two centimeters towards the center.
- 15. Roll the wraps up tightly.
- 16. Cut the rolled wraps in half crosswise.
- 17. Arrange the wrap halves on plates.
- 18. Sprinkle the finished wraps with some fresh chives.
- 19. Add a little more pepper if desired.
