🍽️ Savory shrimp flan with crispy purple potato chips

Ingredients
- 1 large, purple potato
- 4 tbsp vegetable oil
- salt
- 4 eggs
- 50 ml heavy cream
- pepper (from the grinder)
- curry powder
- 8 cooked, peeled shrimp
Instructions
- 1. Peel the potato and wash it thoroughly.
- 2. Slice the potato into paper-thin rounds.
- 3. Pat the potato slices dry with a kitchen towel.
- 4. Heat oil in a frying pan.
- 5. Fry the potato slices in the hot oil until golden yellow.
- 6. Place the fried potatoes on kitchen paper to drain the oil.
- 7. Lightly salt the potato chips.
- 8. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 9. Whisk the eggs with the cream until blended.
- 10. Season the egg mixture with salt, pepper, and curry.
- 11. Pour the egg mixture into small ovenproof jars.
- 12. Place the jars in a larger baking pan.
- 13. Fill the baking pan with boiling water until it reaches about two finger widths up the sides of the jars.
- 14. Place the pan in the oven.
- 15. Bake the flans for about 30 minutes.
- 16. Remove the jars from the oven.
- 17. Garnish the flans with the fried potato chips and the shrimp.
- 18. Serve the dish immediately.
