🍽️ Savory Waffles with Shrimp Salad

Ingredients
- 200 g Shrimp (cooked)
- 1 Shallot
- 2 tbsp Mayonnaise
- 2 tbsp Double cream
- Salt
- Pepper (from the mill)
- Lemon juice
- 3 Eggs
- Salt
- 2 tbsp fresh chopped herbs (e.g. dill and chives)
- 50 g Butter (melted)
- 100 g Flour
- 100 g Herb quark
- Oil (for the waffle iron)
- fresh chopped dill (for sprinkling)
Instructions
- 1. Rinse the shrimp under cold water.
- 2. Let the shrimp drain well in a sieve.
- 3. Peel the shallot.
- 4. Finely chop the shallot.
- 5. Mix the shallot with the mayonnaise.
- 6. Add the herbs to the mayonnaise mixture.
- 7. Stir in the crème double (creamy cream).
- 8. Season the mixture with salt.
- 9. Season the mixture with pepper.
- 10. Add lemon juice.
- 11. Taste the sauce and adjust seasoning.
- 12. Fold in the remaining fresh herbs.
- 13. Place the bowl in the refrigerator, covered.
- 14. Separate the eggs.
- 15. Add a pinch of salt to the eggs.
- 16. Whip the egg whites to stiff peaks.
- 17. Whisk the egg yolks with the butter until frothy.
- 18. Stir the quark (curd cheese) into the egg yolk mixture.
- 19. Sift the flour over the mixture.
- 20. Stir in the flour.
- 21. Gently fold in the egg whites.
- 22. Fold the herbs into the batter.
- 23. Brush the waffle iron with a little oil.
- 24. Bake the waffles one by one until golden brown.
- 25. Take a total of eight waffles out of the iron.
- 26. Place a dollop of shrimp salad on each waffle.
- 27. Sprinkle the waffles with dill.
- 28. Serve the waffles immediately.
