🍰 Savory Vegetable Tartlets

Ingredients
- 200 g flour
- 1 pinch salt
- 50 g lard
- 3 tbsp lukewarm water
- 250 g mixed vegetables (e.g. carrots, celery stalks, kohlrabi, zucchini...)
- 150 g mayonnaise
- salt
- pepper (from the mill)
- 2 tsp lemon juice
- herb leaf (for garnish)
Instructions
- 1. Put flour, salt, and lard into a large bowl.
- 2. Add water little by little as needed.
- 3. Knead the ingredients quickly into a smooth and pliable dough.
- 4. Cover the dough and let it rest in a cool place for 30 minutes.
- 5. Preheat the oven to 180 degrees Celsius.
- 6. Roll out the dough thinly on a floured surface.
- 7. Cut out small shapes from the dough and place them into a muffin tin.
- 8. Prick the bottoms of the tartlets several times with a fork.
- 9. Bake the tartlets in the preheated oven for about 15 minutes until golden yellow.
- 10. Wash the vegetables thoroughly and clean them.
- 11. Cut the vegetables into very fine cubes.
- 12. Mix the vegetable cubes with mayonnaise.
- 13. Season the mixture with salt, pepper, and a squeeze of lemon juice.
- 14. Fill the cooled tartlets with the vegetable mayonnaise mixture.
- 15. Garnish the tartlets with fresh herb leaves before serving.
