  1. 1. Put flour, salt, and lard into a large bowl.
  2. 2. Add water little by little as needed.
  3. 3. Knead the ingredients quickly into a smooth and pliable dough.
  4. 4. Cover the dough and let it rest in a cool place for 30 minutes.
  5. 5. Preheat the oven to 180 degrees Celsius.
  6. 6. Roll out the dough thinly on a floured surface.
  7. 7. Cut out small shapes from the dough and place them into a muffin tin.
  8. 8. Prick the bottoms of the tartlets several times with a fork.
  9. 9. Bake the tartlets in the preheated oven for about 15 minutes until golden yellow.
  10. 10. Wash the vegetables thoroughly and clean them.
  11. 11. Cut the vegetables into very fine cubes.
  12. 12. Mix the vegetable cubes with mayonnaise.
  13. 13. Season the mixture with salt, pepper, and a squeeze of lemon juice.
  14. 14. Fill the cooled tartlets with the vegetable mayonnaise mixture.
  15. 15. Garnish the tartlets with fresh herb leaves before serving.
