Ingredients
- 150 g spinach (frozen)
- soft butter (for the molds)
- flour (for the molds)
- 2 garlic cloves
- 1 tsp salt
- 0.5 tsp ground nutmeg
- 0.5 tsp ground pepper
- 100 g feta
- 100 g hard cheese (e.g. Gouda, Emmental)
- 2 eggs
- 100 g melted butter
- 250 ml milk
- 250 g flour
- 3 tsp baking powder
Instructions
- 1. Allow the frozen spinach to thaw completely.
- 2. Grease the cups of a muffin tin with butter.
- 3. Lightly dust the greased cups with flour.
- 4. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 5. Squeeze the thawed spinach well to remove excess liquid.
- 6. Chop the drained spinach finely.
- 7. Peel the garlic clove and press it directly onto the spinach.
- 8. Add salt, ground nutmeg, and pepper.
- 9. Cube the feta and hard cheese into small pieces.
- 10. Whisk the eggs loosely in a separate bowl.
- 11. Mix the whisked eggs with the butter and milk.
- 12. Add the egg-milk mixture to the chopped spinach.
- 13. Mix the flour with the baking powder.
- 14. Stir the flour mixture and the cheese briefly into the spinach.
- 15. Ensure that the entire mixture is slightly moist.
- 16. Fill the batter evenly into the prepared muffin cups.
- 17. Bake the muffins in the oven for about 25 minutes.
- 18. Serve the muffins warm or cold according to your preference.
