  1. 1. Whisk both types of quark together with the cream cheese, lemon juice, and two tablespoons of olive oil until smooth.
  2. 2. Season the quark mixture to taste with salt and pepper.
  3. 3. Slice the white bread crosswise into even slices.
  4. 4. Use a round cookie cutter (about the size of a drinking glass) to cut out round discs from the bread slices.
  5. 5. Heat the remaining olive oil in a frying pan.
  6. 6. Peel the garlic clove.
  7. 7. Fry the white bread discs in the hot olive oil until golden brown.
  8. 8. Press the garlic directly into the pan while frying.
  9. 9. Fill the quark mixture into a piping bag fitted with a large star tip.
  10. 10. Layer the quark cream and the fried white bread discs alternately into the glasses.
  11. 11. Sprinkle the finished cream with fresh herbs and serve immediately.
