🍽️ Savory Crêpes with Fried Pear and Radicchio

Ingredients
- 2 Eggs
- 1 Pinch Salt
- 120 g Flour
- 2 tbsp liquid Butter
- 200 ml Milk
- Butter (for frying)
- 1 large Pear
- 0.5 small Radicchio
- 50 g Walnuts
- 2 tbsp Butter
- 1 tbsp liquid Honey
- 1 tbsp Lemon juice
- 150 g Gorgonzola
- Pepper (from the mill)
Instructions
- 1. Put the eggs, salt, flour, butter, and milk into a bowl.
- 2. Whisk the ingredients with a whisk until you have a smooth batter.
- 3. Cover the bowl and let the batter rest for about 10 minutes.
- 4. Wash the pear under running water.
- 5. Cut the pear in half through the center.
- 6. Remove the core with a knife.
- 7. Cut the pear halves into thin wedges.
- 8. Wash the radicchio and dry it.
- 9. Tear the radicchio leaves into smaller pieces.
- 10. Finely chop the walnuts.
- 11. Heat a pan and add some butter.
- 12. Fry the pear wedges, radicchio, and walnuts in the hot pan.
- 13. Cook the ingredients until they are lightly golden brown.
- 14. Drizzle the honey over the mixture.
- 15. Add the lemon juice.
- 16. Remove the pan from the heat.
- 17. Let the mixture rest for a short while.
- 18. Heat another pan and add butter.
- 19. Pour some batter into the hot pan.
- 20. Bake the crêpes until golden.
- 21. Repeat this until you have four crêpes.
- 22. Place the finished crêpes on the plates.
- 23. Place a spoonful of the pear mixture on each crêpe.
- 24. Crumble the cheese over the toppings.
- 25. Season the crêpes with ground pepper.
- 26. Serve the pancakes immediately.
