🍽️ Savory Herb Quark Dumplings with Asparagus Ragout

Ingredients
- 4 shallots
- 4 tbsp butter
- 3 bunches basil
- low-fat quark 750 g
- 3 eggs
- 4 tbsp crème fraîche
- 200 g flour
- 150 g breadcrumbs
- 500 g white asparagus
- 500 g green asparagus
- 0.25 l white wine
- 0.25 l vegetable broth (from a jar)
- 250 g crème fraîche
- salt
- pepper
Instructions
- 1. Peel the shallots and chop them very finely.
- 2. Heat two tablespoons of butter in a pan.
- 3. Sauté half of the shallots in the butter.
- 4. Add the basil leaves and sauté them briefly.
- 5. Let the shallot-basil mixture cool down completely.
- 6. Press the quark through a fine sieve to make it smooth.
- 7. Stir the eggs and crème fraîche into the quark until smooth.
- 8. Add flour, breadcrumbs, and the cooled basil mixture to the quark.
- 9. Season the dough with salt and pepper.
- 10. Shape the dough into a long roll.
- 11. Cut the roll into twelve equal pieces.
- 12. Dust your hands with flour and shape them into small dumplings.
- 13. Cook the dumplings in plenty of salted water for twelve minutes.
- 14. Peel the white asparagus and wash the green asparagus.
- 15. Cut the asparagus diagonally into bite-sized pieces.
- 16. Sauté the remaining shallots in the remaining butter.
- 17. Add the asparagus and fry it briefly.
- 18. Deglaze the pan with white wine.
- 19. Stir in the broth and cream.
- 20. Season the ragout with salt and pepper.
- 21. Let the ragout simmer for ten minutes.
- 22. Lift the finished dumplings out of the water.
- 23. Arrange the dumplings on plates.
- 24. Serve the ragout alongside.
