  1. 1. Wash the cucumbers thoroughly and puree them into a fine pulp. Peel the shallot and cut it into very small cubes. Wash the dill, dry it, and chop the fine tips finely.
  2. 2. Mix the cucumber pulp with the shallots, dill, and salt. Place the mixture in a sieve and let it drain overnight so that the liquid can flow off.
  3. 3. Stir the drained cucumber mixture well with mustard seeds, pepper, ginger, and fruit vinegar. Fill the sauce into a jar that you have previously rinsed with hot water.
  4. 4. The sauce keeps for about one month. It goes perfectly as a side dish to quickly fried meat dishes and potato dishes.
