🍽️ Spicy Cucumber Chutney

Ingredients
- 2 cucumbers
- 1 shallot
- 3 sprigs dill
- 2 tbsp salt
- 100 g mustard seeds
- pepper (from the mill)
- 0.25 tsp ginger powder
- 125 ml fruit vinegar
Instructions
- 1. Wash the cucumbers thoroughly and puree them into a fine pulp. Peel the shallot and cut it into very small cubes. Wash the dill, dry it, and chop the fine tips finely.
- 2. Mix the cucumber pulp with the shallots, dill, and salt. Place the mixture in a sieve and let it drain overnight so that the liquid can flow off.
- 3. Stir the drained cucumber mixture well with mustard seeds, pepper, ginger, and fruit vinegar. Fill the sauce into a jar that you have previously rinsed with hot water.
- 4. The sauce keeps for about one month. It goes perfectly as a side dish to quickly fried meat dishes and potato dishes.
