Ingredients
- 250 g flour
- 80 g peanuts (chopped)
- 2.5 tsp baking powder
- 0.5 tsp baking soda
- 3 eggs
- salt
- pepper
- 1 tbsp chopped parsley
- 80 ml oil
- 300 g plain yogurt
- 1 muffin tin
- fats (for the muffin tin)
- paper baking cups (or 12)
Instructions
- 1. Grease the muffin tin or line it with paper liners. Mix the flour with the nuts, baking powder, and baking soda in a bowl.
- 2. Lightly beat the eggs in a large bowl, then stir in the salt, pepper, parsley, oil, and yogurt. Fold in the flour mixture until all dry ingredients are moist.
- 3. Fill the batter into the tin cups and bake the muffins in the preheated oven at 180 degrees for about 25 minutes. Perform a skewer test, remove the muffins, let them cool slightly, and then transfer them to a wire rack to cool completely.
