🍽️ Savory Apple Soup with Crispy Bacon

Ingredients
- 2 onions
- 350 g potatoes
- 3 tart apples (e.g. Boskop)
- 7 slices breakfast bacon (breakfast bacon)
- 2 tsp oil
- 150 ml apple juice
- 750 ml vegetable broth
- 5 sprigs marjoram
- salt
- pepper
Instructions
- 1. Peel the onions, the potatoes, and two of the apples.
- 2. Dice the onions, potatoes, and apples into small cubes.
- 3. Dice the three slices of bacon.
- 4. Heat the oil in a pot.
- 5. Fry the bacon cubes in the hot oil.
- 6. Add the onion cubes, apple cubes, and potato cubes to the bacon.
- 7. Sauté the vegetables and fruit briefly.
- 8. Deglaze the mixture with apple juice and broth.
- 9. Let the soup simmer on medium heat for about 15 to 20 minutes.
- 10. Core the remaining apple using a corer.
- 11. Slice the cored apple into rings.
- 12. Fry the remaining bacon in a pan without additional fat until crispy.
- 13. Let the bacon drain on kitchen paper.
- 14. Fry the apple rings in the remaining fat for two minutes on each side.
- 15. Pluck the marjoram leaves from the stems.
- 16. Puree the soup until smooth.
- 17. Season the soup with salt, pepper, and the marjoram leaves.
- 18. Serve the soup garnished with the fried apple rings and bacon strips.
