🍽️ Spicy Banana Leaf Wraps with Chicken

Ingredients
- 1 red chili pepper
- 2 small red onions
- 2 lime leaves
- 1 stalk lemongrass
- 1 lime
- 1 banana flower
- 8 sprigs cilantro
- 4 sprigs mint
- 350 g chicken breast fillet
- 1 tbsp rapeseed oil
- 6 tbsp classic vegetable broth
- 2 tbsp Thai fish sauce
- salt
- pepper
- 2 tbsp fried onions (ready-made product)
Instructions
- 1. Remove the stems and seeds from the chili peppers.
- 2. Wash the chili peppers and chop them finely.
- 3. Peel the red onions.
- 4. Cut the onions in half lengthwise.
- 5. Slice the onion halves into thin rings.
- 6. Wash the kaffir lime leaves.
- 7. Pat the kaffir lime leaves dry with a cloth.
- 8. Cut the kaffir lime leaves into thin strips.
- 9. Remove the tough outer leaves from the lemongrass.
- 10. Wash the lemongrass stalk.
- 11. Finely chop the pale, tender part of the lemongrass.
- 12. Rinse the lime under hot water.
- 13. Cut the lime into wedges.
- 14. Wash the banana blossom.
- 15. Pat the banana blossom dry.
- 16. Peel off four large bracts from the banana blossom.
- 17. Rinse the chicken breast fillet.
- 18. Pat the chicken fillet dry with a cloth.
- 19. Finely chop the chicken meat using a large heavy knife.
- 20. Heat the oil in a wok or a large frying pan.
- 21. Fry the chicken meat while stirring constantly.
- 22. Cook the meat for three to four minutes.
- 23. Pour the vegetable broth into the pan.
- 24. Add the chopped lemongrass.
- 25. Add the chopped chili.
- 26. Add the sliced onions.
- 27. Add the kaffir lime leaves.
- 28. Add the fish sauce.
- 29. Let the mixture simmer for five minutes.
- 30. Wash the coriander and mint in the meantime.
- 31. Shake the herbs dry.
- 32. Pluck the leaves from the stems.
- 33. Chop the herbs coarsely.
- 34. Add the herbs to the meat in the pan.
- 35. Mix everything well.
- 36. Season the filling with salt and pepper.
- 37. Fill the chicken mixture into the banana leaves.
- 38. Sprinkle the wraps with fried onions.
- 39. Garnish the dishes with the lime wedges.
- 40. Serve the wraps hot.
