  4. 4. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  5. 5. Wash the spinach thoroughly.
  6. 6. Remove tough stems and any damaged leaves from the spinach.
  7. 7. Add the damp spinach to a pot with a little boiling salted water.
  8. 8. Let the spinach wilt in the pot.
  9. 9. Drain the spinach.
  10. 10. Rinse the spinach with cold water to preserve its color.
  11. 11. Let the spinach drain well.
  12. 12. Squeeze the spinach firmly to remove any remaining liquid.
  13. 13. Finely chop the spinach.
  14. 14. Clean the leeks (onion-like vegetable).
  15. 15. Wash the leeks.
  16. 16. Slice the leeks into thin rings.
  17. 17. Sauté the leek rings in butter.
  18. 18. Score a cross into the bottom of the tomatoes.
  19. 19. Pour boiling water over the tomatoes.
  20. 20. Immediately shock the tomatoes with cold water.
  21. 21. Peel the skin off the tomatoes.
  22. 22. Quarter the tomatoes.
  23. 23. Remove the seeds from the tomatoes.
  24. 24. Dice the tomato flesh into small cubes.
  25. 25. Place the chopped spinach in a large bowl.
  26. 26. Add the sautéed leeks to the bowl.
  27. 27. Add the tomato cubes to the bowl.
  28. 28. Add the cheese to the bowl.
  29. 29. Mix all ingredients together well.
  30. 30. Season the mixture with salt.

  32. 32. Season the mixture with nutmeg.
  33. 33. Drain the cooked potatoes.

  47. 47. Place another layer of phyllo dough on top.
  48. 48. Place the remaining potato slices on top.
  49. 49. Season this layer as well.
  50. 50. Spread the remaining vegetable filling.
  51. 51. Pour the remaining quark mixture over it.
  52. 52. Bake the pie in the preheated oven for approx. 60 minutes.
  53. 53. Cover the pie with aluminum foil if it browns too much.
  54. 54. Serve the pie lukewarm or cold.
