🍽️ Savory Pie with Potatoes, Spinach, and Quark

Ingredients
- 500 g firm-cooking potatoes
- 200 g fresh spinach
- 350 g leek
- 1 tbsp butter
- 2 tomatoes
- 100 g grated Alpine cheese
- salt
- pepper (from the mill)
- freshly grated nutmeg
- 1 package filo pastry
- 500 g quark
- 150 g yogurt
- 5 eggs
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place the potatoes in a pot of salted water.
- 3. Cook the potatoes for 20 minutes until tender.
- 4. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 5. Wash the spinach thoroughly.
- 6. Remove tough stems and any damaged leaves from the spinach.
- 7. Add the damp spinach to a pot with a little boiling salted water.
- 8. Let the spinach wilt in the pot.
- 9. Drain the spinach.
- 10. Rinse the spinach with cold water to preserve its color.
- 11. Let the spinach drain well.
- 12. Squeeze the spinach firmly to remove any remaining liquid.
- 13. Finely chop the spinach.
- 14. Clean the leeks (onion-like vegetable).
- 15. Wash the leeks.
- 16. Slice the leeks into thin rings.
- 17. Sauté the leek rings in butter.
- 18. Score a cross into the bottom of the tomatoes.
- 19. Pour boiling water over the tomatoes.
- 20. Immediately shock the tomatoes with cold water.
- 21. Peel the skin off the tomatoes.
- 22. Quarter the tomatoes.
- 23. Remove the seeds from the tomatoes.
- 24. Dice the tomato flesh into small cubes.
- 25. Place the chopped spinach in a large bowl.
- 26. Add the sautéed leeks to the bowl.
- 27. Add the tomato cubes to the bowl.
- 28. Add the cheese to the bowl.
- 29. Mix all ingredients together well.
- 30. Season the mixture with salt.
- 31. Season the mixture with pepper.
- 32. Season the mixture with nutmeg.
- 33. Drain the cooked potatoes.
- 34. Peel the warm potatoes.
- 35. Slice the potatoes into thin rounds.
- 36. Grease the pie dish with some fat.
- 37. Place the quark in a bowl.
- 38. Add the yogurt to the quark.
- 39. Add the eggs to the quark-yogurt mixture.
- 40. Stir the quark mixture until smooth.
- 41. Season the quark mixture to taste.
- 42. Place one layer of phyllo dough into the pie dish.
- 43. Place half of the potato slices on the dough.
- 44. Season the potato layer.
- 45. Spread half of the vegetable filling over the potatoes.
- 46. Pour half of the quark mixture over the vegetables.
- 47. Place another layer of phyllo dough on top.
- 48. Place the remaining potato slices on top.
- 49. Season this layer as well.
- 50. Spread the remaining vegetable filling.
- 51. Pour the remaining quark mixture over it.
- 52. Bake the pie in the preheated oven for approx. 60 minutes.
- 53. Cover the pie with aluminum foil if it browns too much.
- 54. Serve the pie lukewarm or cold.
