🍽️ Fluffy Plum Rolls

Ingredients
- 250 g flour
- 3 tbsp butter
- 125 ml milk
- 2 tbsp sugar
- 0.5 cube yeast
- 1 egg yolk
- flour (for the work surface)
- baking paper
- 350 g plums
- 3 tbsp sugar
- 0.25 tsp ground cloves
- 1 tsp cinnamon
- 30 g almond kernels
- 3 tbsp butter
Instructions
- 1. Preheat your oven to 200 degrees Celsius (conventional heat).
- 2. Stir 1 tablespoon of sugar and the yeast into the milk until smooth.
- 3. Place the flour, butter, remaining sugar, and egg yolk into a large bowl.
- 4. Pour the yeast milk mixture over the dry and wet ingredients.
- 5. Knead everything with the dough hooks of a hand mixer until you have a smooth dough.
- 6. Cover the bowl and let the dough rise in a warm place for about 45 minutes.
- 7. Wash the plums (prunes) and cut them in half.
- 8. Remove the pits and chop the fruit flesh into small pieces.
- 9. Heat 3 tablespoons of water in a pan.
- 10. Stew the plum pieces in the water over medium heat.
- 11. Continue cooking until all the liquid has evaporated.
- 12. Sweeten the compote with 2 tablespoons of sugar.
- 13. Let the plum compote cool down completely.
- 14. Knead the risen dough briefly on a lightly floured surface.
- 15. Roll the dough out into a rectangle measuring approximately 20 x 30 cm.
- 16. Mix 1 tablespoon of sugar with ground cloves, cinnamon, and almonds.
- 17. Sprinkle the dough rectangle evenly with the spice-sugar mixture.
- 18. Spread the cooled plum compote evenly over the dough.
- 19. Roll the dough up tightly starting from the long side.
- 20. Cut the roll into even slices.
- 21. Place the rolls on a baking sheet lined with baking paper.
- 22. Cover the rolls and let them rise for another 20 minutes.
- 23. Brush the rolls with melted butter.
- 24. Bake the rolls in the preheated oven (middle rack) for about 25 minutes.
