  1. 1. Rinse the plums thoroughly under running water.
  2. 2. Remove the pits from the fruit.
  3. 3. Cut the plums into four equal quarters.
  4. 4. Place the plum quarters into a large cooking pot.
  5. 5. Add the sugar, cinnamon stick, and lemon juice.
  6. 6. Stir the ingredients vigorously until well combined.
  7. 7. Let the mixture stand for two hours.
  8. 8. Preheat the oven to 150 degrees Celsius.
  9. 9. Set the oven heating to top and bottom heat.
  10. 10. Place the pot with the mixture into the hot oven.
  11. 11. Let the plums simmer for two to three hours.
  12. 12. Check regularly to see if the fruit is soft.
  13. 13. Stir the mixture every twenty to thirty minutes.
  14. 14. Remove the cinnamon stick from the pot when the jam is thick.
  15. 15. Puree the plums finely with a hand blender.
  16. 16. Fill the warm jam into clean jars.
  17. 17. Seal the jars tightly.
  18. 18. Let the jars cool down at room temperature.
