  1. 1. Thoroughly wash the plums under running water.
  2. 2. Cut the plums in half and remove the pits.
  3. 3. Puree the plum flesh until smooth.
  4. 4. Mix the puree with the lemon juice and the jam sugar.
  5. 5. Place the mixture in a large pot.
  6. 6. Heat the mixture over high heat.
  7. 7. Stir constantly until the jam comes to a boil.
  8. 8. Let the jam boil vigorously for 4 minutes.
  9. 9. Keep stirring to prevent burning.
  10. 10. Stir in the cocoa powder at the end.
  11. 11. Remove the pot from the heat.
  12. 12. Rinse the jars with hot water.
  13. 13. Fill the hot jam immediately into the hot jars to the brim.
  14. 14. Seal the jars immediately with the screw-top lids.
  15. 15. Place the jars upside down on their lids for 10 minutes.
  16. 16. Then turn the jars right side up again.
  17. 17. Let the jam cool down completely.
