🍰 Juicy Plum Cake with Crispy Crumbles

Ingredients
- 400 g flour
- 0.5 cube fresh yeast (21 g)
- 75 g sugar
- 0.2 l lukewarm milk
- 1 pinch salt
- 1 egg
- 75 g melted butter
- butter (for the baking sheet)
- 50 g biscuit crumbs (or breadcrumbs)
- 1.5 kg plums
- 2 tbsp sugar-cinnamon mixture (for sprinkling)
- 80 g flour
- 40 g ground almond kernels
- 80 g sugar
- 100 g liquid butter
- 1 knife tip cinnamon powder
- 40 g almond slices
- powdered sugar (for dusting)
Instructions
- 1. Put the flour into a large bowl and sift it there.
- 2. Press a small indentation into the center of the flour with your hand.
- 3. Dissolve the yeast and one tablespoon of sugar in 4 to 5 tablespoons of milk.
- 4. Pour the milk-yeast mixture into the well in the flour.
- 5. Stir the mixture with a little flour to form a small pre-dough.
- 6. Cover the bowl and let the dough rise in a warm place for about 15 minutes.
- 7. Add the remaining milk, a pinch of salt, an egg, and the butter.
- 8. Knead everything into a smooth dough that slowly starts to pull away from the sides of the bowl.
- 9. Cover the dough again and let it rise for another 45 minutes.
- 10. Preheat your oven to 180 degrees Celsius.
- 11. Set the oven to the top and bottom heat function.
- 12. Press the dough firmly again to remove air bubbles.
- 13. Grease a baking tray thinly with butter.
- 14. Roll out the dough on the tray.
- 15. Make sure to create a small raised edge so nothing spills out.
- 16. Now sprinkle the dough with the prepared crumbs.
- 17. Wash the plums thoroughly and remove the pits.
- 18. Cut the fruits in half.
- 19. Arrange the plum halves in an overlapping pattern (like roof tiles) on the dough.
- 20. Finally, sprinkle everything with a little cinnamon sugar.
- 21. Mix the flour with the ground almonds, sugar, butter, and cinnamon.
- 22. Rub the ingredients together with your fingers until small crumbs form.
- 23. Fold in the sliced almonds and distribute the crumbles evenly over the plums.
- 24. Bake the cake in the oven for about 40 minutes.
- 25. Take the finished cake out of the oven.
- 26. Cut it into pieces while it is still lukewarm or completely cooled.
- 27. Dust the pieces with powdered sugar and serve.
- 28. Add a portion of whipped cream according to your taste.
