  1. 1. Sift the flour into a large bowl.
  2. 2. Make a well in the center of the flour.
  3. 3. Dissolve the yeast and one tablespoon of sugar in 4 to 5 tablespoons of milk.
  4. 4. Pour the yeast milk into the well.
  5. 5. Stir in a little flour to form a pre-dough.
  6. 6. Let the pre-dough rise covered for about 15 minutes.
  7. 7. Add the remaining milk, the rest of the sugar, salt, the egg, and the butter.
  8. 8. Knead everything into a smooth dough until it pulls away from the sides of the bowl.
  9. 9. Let the dough rise covered for about 45 minutes.
  10. 10. Preheat the oven to 180 degrees Celsius (top and bottom heat).
  11. 11. Line a baking pan with baking paper.
  12. 12. Knead the dough vigorously again on a floured surface.
  13. 13. Press the dough out relatively thick and flat.
  14. 14. Place the dough into the prepared pan.
  15. 15. Form a 3 to 4 centimeter high edge from the dough.
  16. 16. Sprinkle the bottom of the dough with the prepared crumbs.
  17. 17. Wash the plums and remove the pits.
  18. 18. Halve the plums.
  19. 19. Place the plum halves with the cut side up in a shingled pattern on the dough.
  20. 20. Mix the flour with the ground almonds, the sugar, the butter, and the cinnamon.
  21. 21. Rub the mixture with your fingers to form crumbs.
  22. 22. Sprinkle the crumble topping over the plums.
  23. 23. Bake the cake in the oven for about 50 minutes.
  24. 24. Perform the skewer test to check the baking time.
  25. 25. Remove the cake from the oven.
  26. 26. Let the cake cool down completely.
