🍰 Juicy Plum Crumble Cake

Ingredients
- 350 g flour
- 0.5 cube yeast
- 75 g sugar
- 120 ml lukewarm milk
- 1 pinch salt
- 1 egg
- 60 g melted butter
- 500 g plums
- flour (for working)
- 2 tbsp biscuit crumbs (or breadcrumbs)
- 80 g flour
- 40 g ground almond kernels
- 80 g sugar
- 100 g liquid butter
- 1 pinch cinnamon powder
Instructions
- 1. Sift the flour into a large bowl.
- 2. Make a well in the center of the flour.
- 3. Dissolve the yeast and one tablespoon of sugar in 4 to 5 tablespoons of milk.
- 4. Pour the yeast milk into the well.
- 5. Stir in a little flour to form a pre-dough.
- 6. Let the pre-dough rise covered for about 15 minutes.
- 7. Add the remaining milk, the rest of the sugar, salt, the egg, and the butter.
- 8. Knead everything into a smooth dough until it pulls away from the sides of the bowl.
- 9. Let the dough rise covered for about 45 minutes.
- 10. Preheat the oven to 180 degrees Celsius (top and bottom heat).
- 11. Line a baking pan with baking paper.
- 12. Knead the dough vigorously again on a floured surface.
- 13. Press the dough out relatively thick and flat.
- 14. Place the dough into the prepared pan.
- 15. Form a 3 to 4 centimeter high edge from the dough.
- 16. Sprinkle the bottom of the dough with the prepared crumbs.
- 17. Wash the plums and remove the pits.
- 18. Halve the plums.
- 19. Place the plum halves with the cut side up in a shingled pattern on the dough.
- 20. Mix the flour with the ground almonds, the sugar, the butter, and the cinnamon.
- 21. Rub the mixture with your fingers to form crumbs.
- 22. Sprinkle the crumble topping over the plums.
- 23. Bake the cake in the oven for about 50 minutes.
- 24. Perform the skewer test to check the baking time.
- 25. Remove the cake from the oven.
- 26. Let the cake cool down completely.
- 27. Release the cake from the pan.
- 28. Cut the cake into pieces and serve.
