🍰 Juicy Plum Cake with Vanilla Sauce

Ingredients
- 300 g flour
- 200 g butter
- 1 egg
- 100 g sugar
- 1 pinch salt
- 500 g plums
- cinnamon
- sugar
- 0.5 packet vanilla pudding powder
- 500 ml milk
- 2 tbsp sugar
- 250 ml milk
- 250 ml whipping cream (or 500 ml milk in total)
- 1 vanilla pod (or other flavorings of your choice)
- 5 egg yolks
- 60 g sugar (to taste, max 100 g in total)
Instructions
- 1. Mix flour, butter, egg, sugar, and salt in a bowl.
- 2. Knead the ingredients into a soft shortcrust dough.
- 3. Wrap the dough tightly in cling film.
- 4. Place the dough in the refrigerator for 1 hour to firm up.
- 5. Wash the plums thoroughly under running water.
- 6. Pat the plums dry with a kitchen towel.
- 7. Cut the plums in half.
- 8. Remove the pits from the plum halves.
- 9. Slice the plum halves into small wedges.
- 10. Divide the dough into two equal parts.
- 11. Shape each part into a round disc.
- 12. Grease a tart pan with butter.
- 13. Place one of the dough discs into the pan.
- 14. Prick the base of the dough several times with a fork.
- 15. Arrange the plum wedges evenly on the dough.
- 16. Sprinkle the plums with sugar.
- 17. Add 2 teaspoons of cinnamon over the plums.
- 18. Cover the cake with the second dough disc.
- 19. Press the edges of the two dough discs firmly together.
- 20. Trim the excess dough from the top edge.
- 21. Sprinkle the surface of the cake with sugar.
- 22. Preheat the oven to 200°C.
- 23. Bake the cake at 200°C for 30 minutes until golden brown.
- 24. Heat the milk together with the sugar in a pot.
- 25. Mix the vanilla pudding powder with a little cold water until smooth.
- 26. Stir the pudding mixture into the hot milk.
- 27. Bring the mixture to a boil while stirring constantly.
- 28. Remove the thick vanilla sauce from the heat.
- 29. Let the cake cool down for a short while.
- 30. Serve the cake with the warm vanilla sauce if desired.
