🍰 Juicy Plum Semolina Cake

Ingredients
- 250 g flour
- 125 g cold butter
- 4 tbsp sugar
- 1 pinch salt
- 1 egg
- 500 ml milk
- 50 g semolina
- 0.25 tsp clove powder
- 750 plums
- 3 egg whites
- 100 g sugar
- 0.5 tsp cinnamon
- fat (for the pan)
- powdered sugar (for dusting)
Instructions
- 1. Mound the flour onto a clean work surface.
- 2. Mix the flour with the sugar and the salt.
- 3. Press a well into the center of the flour mixture.
- 4. Cut the cold butter into small cubes.
- 5. Distribute the butter pieces around the well.
- 6. Place the egg in the center of the well.
- 7. Chop all ingredients roughly with a knife until small crumbs form.
- 8. Quickly knead the crumbs together with your hands to form a smooth dough.
- 9. Shape the dough into a ball.
- 10. Wrap the dough ball in cling film.
- 11. Store the dough in the refrigerator for about 30 minutes.
- 12. Bring the milk to a boil in a pot.
- 13. Stir the semolina slowly into the boiling milk.
- 14. Stir the ground cloves into the milk-semolina mixture.
- 15. Turn off the stove burner.
- 16. Let the mixture swell on the warm plate for about 10 minutes.
- 17. Let the semolina mixture cool down briefly.
- 18. Place two layers of cling film on the work surface.
- 19. Roll the dough thinly between the films.
- 20. Grease your baking pan well.
- 21. Line the greased pan with the dough base.
- 22. Prick the dough base several times with a fork.
- 23. Wash the plums under running water.
- 24. Quarter the plums.
- 25. Remove the pits from the plum quarters.
- 26. Place the plums on the dough with the cut side facing up.
- 27. Whip the egg whites with the sugar until stiff.
- 28. Stir the cinnamon into the egg white mixture.
- 29. Gently fold the egg white mixture into the cooled semolina mixture.
- 30. Distribute the cream evenly over the plums.
- 31. Preheat the oven to 200 degrees.
- 32. Place the tray on the lowest rack.
- 33. Bake the cake for about 30 to 35 minutes.
- 34. Remove the cake from the oven.
- 35. Let the cake cool down completely.
- 36. Dust the finished cake with powdered sugar before serving.
