🍳 Pumpkin Plum Jam

Ingredients
- 500 g plums
- 300 g pumpkin flesh (e.g. Hokkaido pumpkin)
- 500 ml orange juice
- 1 vanilla pod
- 2 tsp ginger
- 500 g jam sugar (2:1)
Instructions
- 1. Wash the plums thoroughly.
- 2. Cut the plums into wedges and remove the stones.
- 3. Coarsely grate the pumpkin flesh.
- 4. Slice the vanilla pod lengthwise.
- 5. Scrape out the tiny seeds from the vanilla pod.
- 6. Place the plums, pumpkin, vanilla seeds, empty vanilla pod, and orange juice into a pot.
- 7. Let the mixture simmer gently over low heat for 15 minutes.
- 8. Stir in the ginger and the jam sugar.
- 9. Let the jam bubble vigorously for another 4 minutes.
- 10. Fill the hot jam into clean, prepared jars.
- 11. Seal the jars immediately after filling.
- 12. Let the jars cool down completely.
