  2. 2. Cut the plums into wedges and remove the stones.
  3. 3. Coarsely grate the pumpkin flesh.
  4. 4. Slice the vanilla pod lengthwise.
  5. 5. Scrape out the tiny seeds from the vanilla pod.
  6. 6. Place the plums, pumpkin, vanilla seeds, empty vanilla pod, and orange juice into a pot.
  7. 7. Let the mixture simmer gently over low heat for 15 minutes.
  8. 8. Stir in the ginger and the jam sugar.
  9. 9. Let the jam bubble vigorously for another 4 minutes.
  10. 10. Fill the hot jam into clean, prepared jars.
  11. 11. Seal the jars immediately after filling.
  12. 12. Let the jars cool down completely.
