🍽️ Plum Quark Tart

Ingredients
- 150 g flour
- 100 g butter
- 1 egg yolk
- 2 tbsp whipping cream
- 75 g sugar
- 1 pinch salt
- 800 g plums
- 250 g low-fat quark
- 100 ml whipping cream
- 2 eggs
- 1 tbsp freshly grated lemon zest (organic lemon)
- 3 tbsp sugar
Instructions
- 1. Knead flour, butter, egg, cream, sugar, and salt into a shortcrust pastry.
- 2. Wrap the dough in cling film.
- 3. Chill the dough in the refrigerator for about 1 hour.
- 4. Wash the plums and pat them dry.
- 5. Halve the plums and remove the pits.
- 6. Quarter the plum halves.
- 7. Preheat the oven to 200°C (convection 180°C).
- 8. Dust a work surface with flour.
- 9. Roll out the shortcrust pastry into a circle.
- 10. Lightly grease a tart pan.
- 11. Place the dough into the tart pan.
- 12. Lift up the edges to form a rim.
- 13. Prick the dough base several times with a fork.
- 14. Whip the cream until stiff.
- 15. Mix the quark with the eggs, sugar, and lemon zest.
- 16. Fold the whipped cream into the quark mixture.
- 17. Spread the quark-cream mixture evenly over the dough.
- 18. Top the tart with the plums.
- 19. Bake the tart for 35 minutes until golden brown.
- 20. Let the tart cool down.
- 21. Serve the tart lukewarm.
