🍰 Juicy Plum Muffins

Ingredients
- 30 g Sesame (hulled; 2 tbsp)
- 400 g Plums
- 100 g Whole wheat flour
- 80 g Wheat flour (Type 550)
- 125 g Cane sugar
- 1 Pinch Salt
- 3 tsp Baking powder
- 170 ml Buttermilk
- 1 Egg
- 50 ml Germ oil
Instructions
- 1. Put the sesame seeds into a small non-stick pan.
- 2. Roast the sesame seeds until golden brown.
- 3. Remove the pan from the heat.
- 4. Pour the sesame seeds onto a small plate.
- 5. Let the sesame seeds cool down completely.
- 6. Wash the plums under running water.
- 7. Drain the plums well.
- 8. Halve the plums and remove the stones.
- 9. Cut 12 plum halves into wedges.
- 10. Dice the remaining plums into small pieces.
- 11. Add flour, sugar, a pinch of salt, and baking powder to a mixing bowl.
- 12. Mix the dry ingredients well together.
- 13. Add buttermilk, egg, and oil to the bowl.
- 14. Take about two-thirds of the cooled sesame seeds.
- 15. Add this sesame to the mixing bowl as well.
- 16. Beat everything with a hand mixer until you have a smooth batter.
- 17. Get a wooden spoon ready.
- 18. Gently fold the diced plums into the batter.
- 19. Prepare a muffin tin with 12 cups.
- 20. Place a paper baking cup in each cup.
- 21. Get a tablespoon ready.
- 22. Distribute the batter evenly among the cups.
- 23. Place the plum wedges on top of the muffins.
- 24. Sprinkle the remaining sesame seeds over the top.
- 25. Preheat the oven to 180 degrees Celsius conventional heat.
- 26. Place the tray on the middle rack.
- 27. Bake the muffins for about 25 minutes.
- 28. Remove the tray from the oven.
- 29. Let the muffins cool in the tray for about 5 minutes.
- 30. Place the tray on a wire cooling rack.
- 31. Let the muffins cool down completely in the cups.
