  2. 2. Pour boiling water over the plums for a short moment.
  3. 3. Peel the skin off the plums.
  4. 4. Cut the plums in half and remove the pits.
  5. 5. Dice the fruit flesh into small cubes.
  6. 6. Peel the ginger.
  7. 7. Grate the ginger finely.
  8. 8. Mix the diced plums with the grated ginger.
  9. 9. Add enough water so that the total weight is 1 kilogram.
  10. 10. Stir the jam sugar into the mixture.
  11. 11. Cover the bowl and let the mixture sit for 6 hours.
  12. 12. Slowly bring the jam to a boil.
  13. 13. Let the jam bubble vigorously for 3 minutes while stirring constantly.
  14. 14. Stir the citric acid into the hot jam.
  15. 15. Fill the jam immediately into prepared hot jars.
  16. 16. Seal the jars tightly.
