  3. 3. Place the halved plums into a large pot.
  4. 4. Add the sugar, red wine vinegar, red wine, cloves, ginger, and cinnamon to the pot.
  5. 5. Heat the mixture over medium heat until it begins to simmer gently.
  6. 6. Let the plums cook for about 15 minutes over low heat.
  7. 7. Immediately fill the hot plums and liquid into well-rinsed jars.
  8. 8. Seal the jars tightly.
  9. 9. Allow the jars to cool, then serve the plums chilled.
