🍰 Crispy Plum Pastry Pockets

Ingredients
- 1 puff pastry (300 g, from the refrigerated section)
- 4 large plums
- 60 g plum jam
- 20 ml rum
- 1 egg yolk
- 2 tbsp sugar-cinnamon mixture
- powdered sugar (for dusting)
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Line a baking tray with baking paper.
- 3. Roll out the puff pastry flat.
- 4. Cut out eight rectangles measuring approximately 7 by 10 centimeters.
- 5. Place the pastry rectangles onto the prepared tray.
- 6. Wash the plums thoroughly.
- 7. Halve the plums and remove the pits.
- 8. Warm the jam together with the rum in a small pot.
- 9. Fill the warm jam and rum mixture into the hollowed-out centers of the plum halves.
- 10. Place the filled plums onto the pastry rectangles.
- 11. Whisk the egg yolk in a small bowl.
- 12. Brush the edges of the pastry around the plums with the whisked egg yolk.
- 13. Sprinkle sugar over the pastry edges that have been brushed with egg yolk.
- 14. Bake the pastry pockets in the oven for 15 to 20 minutes.
- 15. Allow the pastries to cool down completely.
- 16. Dust the cooled pastry pockets with powdered sugar before serving.
