🍽️ Peach Soup with Semolina Dumplings

Ingredients
- 500 peaches
- 1 tbsp sugar
- 50 ml peach nectar
- juice of one lemon
- 1 piece fresh ginger (approx. 3 cm, grated)
- 150 ml white wine
- 300 ml orange juice
- 200 ml milk
- vanilla pods
- 65 g wheat semolina
- 1 egg
- 1 tbsp honey
- 200 g blueberries
- mint (for garnish)
Instructions
- 1. Pour boiling water over the peaches.
- 2. Immediately shock them in ice water.
- 3. Peel the skin off the peaches.
- 4. Cut one peach into wedges for garnish.
- 5. Dice the remaining peaches.
- 6. Place the peach cubes, sugar, peach nectar, lemon juice, ginger, and white wine in a pot.
- 7. Bring the mixture to a boil.
- 8. Puree the fruit mixture with a hand blender.
- 9. Stir in the orange juice.
- 10. Let the soup cool down.
- 11. Place milk, vanilla seeds, and semolina in a small saucepan.
- 12. Bring the milk mixture to a boil.
- 13. Stir in the egg and honey.
- 14. Let the semolina porridge cool down.
- 15. Bring plenty of salted water to a boil in a pot.
- 16. Scoop dumplings from the semolina mixture using two teaspoons.
- 17. Cook the dumplings in the gently boiling water.
- 18. Remove the dumplings once they float to the surface.
- 19. Pick over the blueberries.
- 20. Fill the cooled peach soup into bowls.
- 21. Garnish with blueberries, peach wedges, semolina dumplings, and mint.
