  3. 3. Peel the skin off the peaches.
  4. 4. Cut one peach into wedges for garnish.
  5. 5. Dice the remaining peaches.
  6. 6. Place the peach cubes, sugar, peach nectar, lemon juice, ginger, and white wine in a pot.
  7. 7. Bring the mixture to a boil.
  8. 8. Puree the fruit mixture with a hand blender.
  9. 9. Stir in the orange juice.
  10. 10. Let the soup cool down.
  11. 11. Place milk, vanilla seeds, and semolina in a small saucepan.
  12. 12. Bring the milk mixture to a boil.
  13. 13. Stir in the egg and honey.
  14. 14. Let the semolina porridge cool down.
  15. 15. Bring plenty of salted water to a boil in a pot.
  16. 16. Scoop dumplings from the semolina mixture using two teaspoons.
  17. 17. Cook the dumplings in the gently boiling water.
  18. 18. Remove the dumplings once they float to the surface.
  19. 19. Pick over the blueberries.
  20. 20. Fill the cooled peach soup into bowls.
  21. 21. Garnish with blueberries, peach wedges, semolina dumplings, and mint.
