  2. 2. Dip the fruits briefly into boiling water.
  3. 3. Shock the peaches immediately in cold water.
  4. 4. Peel the skin off the peaches.
  5. 5. Halve the fruits and remove the pits.
  6. 6. Finely chop the fruit flesh.
  7. 7. Weigh the chopped fruit flesh.
  8. 8. Add the lemon juice and jam sugar to a pot.
  9. 9. Add the weighed peach flesh.
  10. 10. Bring the mixture to a boil in the pot.
  11. 11. Let the jam boil vigorously for one minute.
  12. 12. Fill the hot jam into prepared jars.
  13. 13. Seal the jars tightly.
