  2. 2. Pour boiling water over the peaches and immediately shock them in cold water.
  3. 3. Remove the skin from the peaches.
  4. 4. Halve the peaches and remove the pits.
  5. 5. Dice the peach flesh into small pieces.
  6. 6. Add the diced peaches, sugar, orange juice, and the slit vanilla pod to the raspberries.
  7. 7. Mix all ingredients thoroughly.
  8. 8. Let the mixture sit for about one hour.
  9. 9. Bring the mixture to a boil while stirring occasionally.
  10. 10. Let the jam bubble and cook for four minutes.
  11. 11. Perform a gel test to check the consistency.
  12. 12. Fill the hot jam into prepared jars.
