  1. 1. Thoroughly wash the peaches under running water.
  2. 2. Briefly dip the peaches into boiling water to loosen the skin (this is called blanching).
  3. 3. Cut the peaches in half and remove the pits.
  4. 4. Puree half of the peach halves with the lemon juice until smooth.
  5. 5. Dice the other half of the peaches into very small cubes.
  6. 6. Place the fruit puree, the peach cubes, and the jam sugar into a pot.
  7. 7. Let the mixture sit overnight.
  8. 8. Heat the mixture over high heat and stir constantly.
  9. 9. Let the jam boil vigorously for 4 minutes.
  10. 10. Fill the hot jam to the brim into well-rinsed jars.
  11. 11. Seal the jars immediately after filling.
