🍽️ Refreshing Peach Cold Soup

Ingredients
- 600 g peaches
- orange juice
- sugar (to taste)
- 1 tbsp cornstarch
- 75 ml heavy cream
- 1 tsp powdered sugar
- ground cinnamon
Instructions
- 1. Pour boiling water over the peaches.
- 2. Remove the peaches immediately and plunge them into ice water to stop the cooking process.
- 3. Peel the skin off the peaches.
- 4. Cut the peaches in half and remove the pits.
- 5. Dice the fruit flesh into small cubes.
- 6. Place the peach pieces into a pot.
- 7. Pour in orange juice until the total liquid volume reaches 800 milliliters.
- 8. Sweeten the mixture to your liking with sugar.
- 9. Bring the peach mixture to a boil in the pot.
- 10. Mix cornstarch with a little cold water in a small bowl.
- 11. Pour the starch-water mixture into the boiling peach soup.
- 12. Stir briefly to thicken the soup.
- 13. Fill the warm soup into individual glasses.
- 14. Place the glasses in the refrigerator until the soup is completely cooled down.
- 15. Whip cream with powdered sugar and a pinch of cinnamon until stiff.
- 16. Place a dollop of whipped cream on each glass of cold soup.
- 17. Lightly dust the surface of the cold soup with cinnamon.
- 18. Serve the cold soup immediately.
