  1. 1. Pour boiling water over the peaches.
  2. 2. Immediately plunge them into a bowl of cold water.
  3. 3. Peel the skin off the peaches.
  4. 4. Remove the pits.
  5. 5. Cut the flesh into wedges.
  6. 6. Melt the sugar in a pot.
  7. 7. Wait until the sugar caramelizes to a golden brown color.
  8. 8. Carefully deglaze the caramel with the sweet wine.
  9. 9. Stir while doing so.
  10. 10. Add half of the peach wedges to the syrup.
  11. 11. Cook the peaches until soft with the lid on.
  12. 12. Duration: 5 to 8 minutes.
  13. 13. Finely chop 1 tablespoon of the lime zest.
  14. 14. Stir the lime zest into the soup.
  15. 15. Puree the mixture until smooth using a hand blender.
  16. 16. Season the soup with peach liqueur.
  17. 17. Add a little elderflower syrup.
  18. 18. Add lemon juice.
  19. 19. Season to your taste.
  20. 20. Let the mixture cool down.
  21. 21. Place the cold peach soup in the refrigerator for one hour.
  22. 22. Divide the cold soup between two bowls.
  23. 23. Garnish the bowls with lime zest.
  24. 24. Serve the soup ice-cold.
