🍽️ Refreshing Cold Peach Soup

Ingredients
- 4 peaches
- 80 g sugar
- 400 ml dessert wine
- 40 ml peach liqueur
- 1 tsp elderflower syrup
- 1 tsp lemon juice
- 100 ml sparkling wine
- 2 tbsp lime zest
Instructions
- 1. Pour boiling water over the peaches.
- 2. Immediately plunge them into a bowl of cold water.
- 3. Peel the skin off the peaches.
- 4. Remove the pits.
- 5. Cut the flesh into wedges.
- 6. Melt the sugar in a pot.
- 7. Wait until the sugar caramelizes to a golden brown color.
- 8. Carefully deglaze the caramel with the sweet wine.
- 9. Stir while doing so.
- 10. Add half of the peach wedges to the syrup.
- 11. Cook the peaches until soft with the lid on.
- 12. Duration: 5 to 8 minutes.
- 13. Finely chop 1 tablespoon of the lime zest.
- 14. Stir the lime zest into the soup.
- 15. Puree the mixture until smooth using a hand blender.
- 16. Season the soup with peach liqueur.
- 17. Add a little elderflower syrup.
- 18. Add lemon juice.
- 19. Season to your taste.
- 20. Let the mixture cool down.
- 21. Place the cold peach soup in the refrigerator for one hour.
- 22. Divide the cold soup between two bowls.
- 23. Garnish the bowls with lime zest.
- 24. Serve the soup ice-cold.
