  1. 1. Put the sugar and 125 milliliters of water into a pot.
  2. 2. Bring the mixture to a boil on the stove.
  3. 3. Let the syrup simmer gently for 3 to 4 minutes.
  4. 4. Remove the pot from the heat.
  5. 5. Let the sugar syrup cool down completely.
  6. 6. Pour boiling water over the peaches.
  7. 7. Remove the skin from the fruits.
  8. 8. Halve the peaches and remove the pits.
  9. 9. Cut the flesh into small cubes.
  10. 10. Put the peach cubes, the cooled syrup, the lime juice, and the liqueur into a blender.
  11. 11. Puree the ingredients until smooth.
  12. 12. Whip the egg whites until stiff.
  13. 13. Gently fold the whipped egg whites into the peach puree.
  14. 14. Transfer the mixture to an ice cream maker.
  15. 15. Freeze the ice cream according to the manufacturer's instructions.
  16. 16. Alternatively, pour the mixture into a shallow dish.
  17. 17. Place the dish in the freezer for at least 4 hours.
  18. 18. Stir the ice cream with a fork every 30 minutes.
