  3. 3. Bring the milk to a boil once.
  4. 4. Remove the pot from the heat.
  5. 5. Let the milk steep for 10 minutes.
  6. 6. Whisk the flour with the egg yolk.
  7. 7. Remove the vanilla pod from the milk.
  8. 8. Vigorously stir the flour-egg mixture into the milk.
  9. 9. Return the mixture to the pot.
  10. 10. Bring the cream to a boil once.
  11. 11. Pour the cream into a bowl.
  12. 12. Let the cream cool down.
  13. 13. Wash the peaches.
  14. 14. Halve the peaches.
  15. 15. Remove the pits.
  16. 16. Slice one peach into wedges.
  17. 17. Fill the cream into a piping bag.
  18. 18. Fill eight peach halves with the cream.
  19. 19. Place brioche slices on plates.
  20. 20. Place two filled peach halves on each brioche slice.
  21. 21. Sprinkle the peaches with chocolate sprinkles.
  22. 22. Drizzle the peaches generously with maple syrup.
