  1. 1. Wash the peaches thoroughly and remove the pits.
  2. 2. Slice the orange and the lemon into thin rounds.
  3. 3. Place the prepared peaches into a large pot.
  4. 4. Add the sugar and the wine to the pot.
  5. 5. Slice the vanilla pod lengthwise.
  6. 6. Scrape out the pulp (seeds) from the pod.
  7. 7. Add both the pod and the pulp to the fruit.
  8. 8. Place the citrus slices on top of the peaches.
  9. 9. Cover the pot and bring the mixture to a boil.
  10. 10. Reduce the heat to very low.
  11. 11. Let the peaches simmer gently for about 20 minutes.
  12. 12. Remove the pot from the heat.
  13. 13. Let the peaches cool down in the liquid.
  14. 14. Serve the peaches with the citrus slices and some of the liquid.
  15. 15. Garnish the dish with fresh mint.
