🍰 Refreshing Peach Lemongrass Shake

Ingredients
- 2 stalks lemongrass
- 30 g ginger (1 piece)
- 0.5 lemon
- 1 tbsp liquid honey
- 2 peaches
- 150 g yogurt (0.3% fat)
- 250 ml plant-based drink (plant milk) (soy-rice drink)
Instructions
- 1. Remove the tough bottom base and the fibrous outer leaves from the lemongrass.
- 2. Take out the soft inner core of the lemongrass and chop it finely.
- 3. Peel the ginger and grate it very finely.
- 4. Squeeze the juice from the lemon.
- 5. Place the grated ginger, one tablespoon of lemon juice, the honey, and the chopped lemongrass into a pot.
- 6. Bring the mixture to a boil on the stove.
- 7. Let the mixture simmer for exactly one minute.
- 8. Remove the pot from the heat and let the liquid cool down completely.
- 9. Rinse the peaches under running water.
- 10. Cut the peaches in half and remove the pit.
- 11. Cut the peach flesh into small pieces.
- 12. Add the peach pieces, the cooled honey-lemongrass mixture, the yogurt, and the soy rice drink to the blender.
- 13. Blend everything with the mixer until it becomes a smooth, fine liquid.
- 14. Pour the finished shake into the glasses.
