🍽️ Juicy Peaches with Creamy Quark Whipped Cream

Ingredients
- 4 peaches
- 0.5 vanilla pod
- 4 tsp raw cane sugar
- 300 g quark
- 4 tsp acacia honey
- 80 g whipping cream
- 250 g raspberries
- 2 sprigs mint
Instructions
- 1. Wash the peaches thoroughly.
- 2. Pierce the skin of the peaches in several places with a toothpick.
- 3. Cut the vanilla pod lengthwise.
- 4. Scrape out the tiny vanilla seeds from the pod.
- 5. Add half a liter of water, the sugar, and the vanilla to a pot.
- 6. Bring the mixture in the pot to a boil.
- 7. Place the peaches in the hot liquid for five minutes.
- 8. Remove the peaches from the liquid.
- 9. Let the peaches cool down.
- 10. Squeeze the quark well using a kitchen cloth.
- 11. Stir the honey into the quark.
- 12. Whip the cream until stiff.
- 13. Gently fold the whipped cream into the quark mixture.
- 14. Place the quark cream in the refrigerator for about thirty minutes.
- 15. Puree the raspberries together with four tablespoons of the peach cooking liquid until smooth.
- 16. Remove the skin from the cooled peaches.
- 17. Cut the peaches in half.
- 18. Remove the pits from the peach halves.
- 19. Slice the peach halves into thin wedges.
- 20. Arrange the quark cream on top of the peach pieces.
- 21. Garnish the dish with the raspberry puree.
- 22. Garnish the dish additionally with fresh mint leaves.
