  1. 1. Wash the peaches thoroughly.
  2. 2. Pierce the skin of the peaches in several places with a toothpick.
  3. 3. Cut the vanilla pod lengthwise.
  4. 4. Scrape out the tiny vanilla seeds from the pod.
  5. 5. Add half a liter of water, the sugar, and the vanilla to a pot.
  6. 6. Bring the mixture in the pot to a boil.
  7. 7. Place the peaches in the hot liquid for five minutes.
  8. 8. Remove the peaches from the liquid.
  9. 9. Let the peaches cool down.
  10. 10. Squeeze the quark well using a kitchen cloth.
  11. 11. Stir the honey into the quark.
  12. 12. Whip the cream until stiff.
  13. 13. Gently fold the whipped cream into the quark mixture.
  14. 14. Place the quark cream in the refrigerator for about thirty minutes.
  15. 15. Puree the raspberries together with four tablespoons of the peach cooking liquid until smooth.
  16. 16. Remove the skin from the cooled peaches.
  17. 17. Cut the peaches in half.
  18. 18. Remove the pits from the peach halves.
  19. 19. Slice the peach halves into thin wedges.
  20. 20. Arrange the quark cream on top of the peach pieces.
  21. 21. Garnish the dish with the raspberry puree.
  22. 22. Garnish the dish additionally with fresh mint leaves.
