🍰 Fruity Peach Yogurt Glass with Crunchy Crumble

Ingredients
- 2 ripe peaches
- 1 tsp lemon juice
- cinnamon
- 80 g fine oat flakes
- 40 g almond flour
- 3 tbsp maple syrup
- 30 g butter
- 1 tbsp raisins (à 15 g)
- 200 g low-fat quark
- 1 tsp vanilla powder
Instructions
- 1. Wash the peaches under running water and pat them dry with a kitchen towel.
- 2. Cut the peaches in half lengthwise and remove the pit.
- 3. Set one of the peach halves aside.
- 4. Dice the other peach half into small cubes.
- 5. Add lemon juice and one teaspoon of cinnamon to the peach cubes.
- 6. Let the peach mixture sit for ten minutes.
- 7. Add oats, almond flour, two tablespoons of maple syrup, butter, a pinch of cinnamon, and raisins to a bowl.
- 8. Knead the ingredients with your hands until a crumbly mixture forms.
- 9. Line a baking sheet with parchment paper.
- 10. Spread the crumble mixture evenly on the tray.
- 11. Preheat the oven to 180 degrees Celsius conventional heat.
- 12. Bake the crumble for 20 to 25 minutes until golden brown.
- 13. Remove the baking sheet from the oven.
- 14. Let the crumble cool completely.
- 15. Add low-fat quark, vanilla powder, and the remaining maple syrup to a bowl.
- 16. Stir the quark mixture until smooth and free of lumps.
- 17. Cut the reserved peach half into very thin slices.
- 18. Layer the marinated peach compote, vanilla quark, and cooled crumble alternately in glasses.
- 19. Always finish with a layer of vanilla quark.
- 20. Lightly sprinkle the top quark layer with cinnamon.
- 21. Garnish the dessert with the fresh peach slices.
- 22. Serve the dessert immediately.
