🍰 Vegan Peach Crumble

Ingredients
- soft, vegan margarine (for the ramekins)
- 500 g peaches
- 0.5 untreated lemon
- 2 tbsp maple syrup
- 50 g ground almond kernels
- 50 g ground hazelnuts
- 80 g raw cane sugar
- 50 g spelt wholemeal flour
- 50 g oat flakes
- 100 g vegan margarine
- 0.5 tsp cinnamon powder
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Grease four small baking dishes (approximately 12 centimeters in diameter).
- 3. Score the peaches in a cross pattern.
- 4. Place the peaches in a bowl of boiling water for about one minute until the skin starts to loosen.
- 5. Remove the peaches and peel off the skin.
- 6. Remove the pits.
- 7. Roughly dice the flesh.
- 8. Distribute the peach flesh into the baking dishes.
- 9. Grate the zest of a lemon.
- 10. Squeeze out the juice.
- 11. Mix the lemon zest, lemon juice, and maple syrup together.
- 12. Pour the lemon mixture over the peaches.
- 13. Stir the mixture gently.
- 14. Quickly rub nuts, sugar, flour, oat flakes, margarine, and cinnamon between your hands to form crumbly bits.
- 15. Sprinkle the crumbs over the peaches.
- 16. Bake the crumble in the preheated oven for about 20 minutes until golden brown.
- 17. Remove the crumble from the oven.
- 18. Serve with ice cream if desired.
