  1. 1. Combine flour, eggs, lard, lukewarm water, and salt in a bowl.
  2. 2. Knead the ingredients into a smooth and pliable dough.
  3. 3. Wrap the dough in cling film and place it in a cool spot for 30 minutes.
  4. 4. Clean the chanterelle mushrooms thoroughly of dirt and debris.
  5. 5. Peel the shallots and dice them into small fine cubes.
  6. 6. Heat olive oil and butter in a pan.
  7. 7. Add the shallots and mushrooms to the pan and sauté them lightly.
  8. 8. Finely chop the parsley and stir it into the mushroom mixture.
  9. 9. Season the filling with salt and pepper to taste.
  10. 10. Spread the mushroom mixture onto a clean kitchen towel.
  11. 11. Let the mushrooms drain and dry them slightly.
  12. 12. Grease a baking tray with a little fat.
  13. 13. Roll out the dough thinly on the greased tray.
  14. 14. Form a small edge on the dough to prevent the filling from spilling out.
  15. 15. Spread the prepared mushrooms evenly over the dough.
  16. 16. Whisk milk and egg yolk together in a small bowl.
  17. 17. Season the milk-egg mixture with salt and grated nutmeg.
  18. 18. Pour the liquid evenly over the mushrooms.
  19. 19. Preheat the oven to 210 degrees Celsius.
  20. 20. Bake the tart for 10 to 15 minutes in the hot oven.
