🍰 Chanterelle Tart with Lard Dough

Ingredients
- 500 g flour
- 2 eggs
- 175 g lard
- 150 ml lukewarm water
- salt
- pepper (from the mill)
- 300 g small chanterelles
- 3 shallots
- 2 tbsp olive oil
- 1 tbsp butter
- 2 tbsp parsley (chopped)
- 6 tbsp milk
- 5 egg yolks
- nutmeg
Instructions
- 1. Combine flour, eggs, lard, lukewarm water, and salt in a bowl.
- 2. Knead the ingredients into a smooth and pliable dough.
- 3. Wrap the dough in cling film and place it in a cool spot for 30 minutes.
- 4. Clean the chanterelle mushrooms thoroughly of dirt and debris.
- 5. Peel the shallots and dice them into small fine cubes.
- 6. Heat olive oil and butter in a pan.
- 7. Add the shallots and mushrooms to the pan and sauté them lightly.
- 8. Finely chop the parsley and stir it into the mushroom mixture.
- 9. Season the filling with salt and pepper to taste.
- 10. Spread the mushroom mixture onto a clean kitchen towel.
- 11. Let the mushrooms drain and dry them slightly.
- 12. Grease a baking tray with a little fat.
- 13. Roll out the dough thinly on the greased tray.
- 14. Form a small edge on the dough to prevent the filling from spilling out.
- 15. Spread the prepared mushrooms evenly over the dough.
- 16. Whisk milk and egg yolk together in a small bowl.
- 17. Season the milk-egg mixture with salt and grated nutmeg.
- 18. Pour the liquid evenly over the mushrooms.
- 19. Preheat the oven to 210 degrees Celsius.
- 20. Bake the tart for 10 to 15 minutes in the hot oven.
- 21. Cut the finished tart into square pieces.
