🍽️ Chanterelles in Olive Oil

Ingredients
- 1 kg fresh chanterelles
- 1 untreated lemon
- 2 garlic cloves
- 1 tbsp rosemary
- 1 tsp thyme
- 2 bay leaves
- 500 ml olive oil
Instructions
- 1. Clean the mushrooms thoroughly.
- 2. Cut the mushrooms into smaller pieces if necessary.
- 3. Rinse the lemon under hot water.
- 4. Dry the lemon with a cloth.
- 5. Grate the outer peel of the lemon finely to get the zest.
- 6. Squeeze the juice out of the lemon.
- 7. Peel the garlic clove.
- 8. Slice the garlic into thin pieces.
- 9. Heat two tablespoons of oil in a pan.
- 10. Fry the mushrooms over high heat.
- 11. Continue frying the mushrooms until the released liquid has completely evaporated.
- 12. Mix the mushrooms with the lemon zest.
- 13. Add rosemary to the mixture.
- 14. Add thyme to the mixture.
- 15. Add a bay leaf to the mixture.
- 16. Add one tablespoon of lemon juice to the mixture.
- 17. Season the mixture with salt.
- 18. Season the mixture with pepper.
- 19. Fill the mushroom mixture into preserving jars.
- 20. Pour olive oil over the mushrooms.
- 21. Fill with enough oil so that the mushrooms are completely covered.
- 22. Store the jars in a cool place.
- 23. Store the jars in a dark place.
