  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Remove visible fat and sinew from the meat.
  4. 4. Divide the meat into four equal pieces.
  5. 5. Gently press the meat pieces flat.
  6. 6. Crush the peppercorns in a mortar.
  7. 7. Rub the meat with the crushed pepper.
  8. 8. Heat a pan with oil over high heat.
  9. 9. Sear the steaks on all sides.
  10. 10. Preheat the oven to 120 °C (Fan: 100 °C, Gas: lowest setting).
  11. 11. Place the pan in the preheated oven.
  12. 12. Cook the steaks in the oven for 30 to 40 minutes.
  13. 13. Take the steaks out of the oven.
  14. 14. Season the steaks with salt to taste.
  15. 15. Warm the plates.
  16. 16. Serve the steaks with french fries on the plates.
  17. 17. Serve the dish immediately.
