Ingredients
- 600 g beef tenderloin (kitchen-ready, middle piece)
- 4 tbsp mixed peppercorns
- 2 tbsp rapeseed oil
- salt
Instructions
- 1. Rinse the meat under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Remove visible fat and sinew from the meat.
- 4. Divide the meat into four equal pieces.
- 5. Gently press the meat pieces flat.
- 6. Crush the peppercorns in a mortar.
- 7. Rub the meat with the crushed pepper.
- 8. Heat a pan with oil over high heat.
- 9. Sear the steaks on all sides.
- 10. Preheat the oven to 120 °C (Fan: 100 °C, Gas: lowest setting).
- 11. Place the pan in the preheated oven.
- 12. Cook the steaks in the oven for 30 to 40 minutes.
- 13. Take the steaks out of the oven.
- 14. Season the steaks with salt to taste.
- 15. Warm the plates.
- 16. Serve the steaks with french fries on the plates.
- 17. Serve the dish immediately.
