🍽️ Juicy pepper steaks with green asparagus and crispy potato chips

Ingredients
- 800 g green asparagus
- sea salt
- 4 beef fillet steaks (approx. 160 g each)
- 1 tsp peppercorns
- 0.5 tsp coriander seeds
- sea salt
- 2 tbsp vegetable oil
- 1 tbsp butter
- 1 box garden cress
Instructions
- 1. Peel the lower ends of the asparagus stalks.
- 2. Boil the asparagus stalks in salted water for about 10 minutes.
- 3. Rinse the steaks briefly and pat them dry with a kitchen towel.
- 4. Crush the pepper and coriander in a mortar to form a coarse powder.
- 5. Season the steaks with the ground spice mixture.
- 6. Salt the steaks generously.
- 7. Heat oil in a pan.
- 8. Place the steaks in the hot pan.
- 9. Sear the steaks for 2 to 3 minutes.
- 10. Turn the steaks once.
- 11. Fry the steaks for another 2 to 3 minutes.
- 12. Decide on your desired degree of doneness.
- 13. Continue frying the steaks at lower heat until they are done.
- 14. Turn the steaks occasionally to ensure even browning.
- 15. Drain the cooking water from the asparagus.
- 16. Toss the asparagus briefly in hot butter.
- 17. Season the asparagus with salt at the end.
- 18. Arrange the asparagus and steaks on plates.
- 19. Sprinkle the meat with freshly cut cress.
- 20. Serve the dish.
- 21. Serve the potato chips as desired.
